So what exactly is Hot Pot?

Let's start with some basics

Hot Pot is a cooking method that originates from China, prepared with a simmering pot of soup stock at the dining table, containing a variety of ingredients.

While a hot pot full of flavored broth is kept simmering, raw ingredients are placed into the pot and are cooked. The cooked food is often eaten with a dipping sauce for additional flavoring.

Typical hot pot ingredients include thinly sliced meat, leaf vegetables, mushrooms, vermicelli, sliced potatoes, bean products, egg dumplings, tofu, and seafood. Raw ingredients are pre-sliced into thin sections that will cook quickly and consistently in the simmering broth, which is maintained at a gentle boiling temperature.

History of Hot Pot

Hot pot is thought to have originated 800-900 years ago. The primary ingredient originally was meat (including mutton and horse), and the broth was not spicy. Hot pot subsequently spread throughout China, where distinct regional variations developed and persist to this day. How do I cook it all?

Ingredient cooking time in the broth is a very common question.

Cooking time for different ingredients are around 1 minute on average. Raw meat may take only 20-30 seconds, but raw dumplings or noodles can take 7-8 minutes. Many vegetables need a couple of minutes.

With a large variety of ingredients available it may be hard to know the cooking time for each so just ask your server. They will be happy to guide you.
